Turkey Day Postmortem

Turkey Man!Well we celebrated our first official Thanksgiving as a married couple. A little strange for me, my parents stayed in southern Oregon, but Amy’s fold came up and I had my buddy Nate and his wife over as well. All fixings were communally put together, Nate’s wife put together the turkey (thank you), Amy made some killer casseroles and sweet potatoes and various other good eatins, and I made peanut butter fudge (see below). I thought I would share my recipe, feel free to post any other great recipes.

Recipe to Peanut Butter Bell Fudge

1. Grease a large platter or a 9×13 pan with butter

2. mix together:
3 cups sugar
1/4 to 1/2 cup corn syrup
3/4 cup milk
1/2 tsp salk
1 cup peanut butter

3. Cook in Microwave until tempature reaches “soft ball” on candy thermometer

4. Remove and add 1 tsp vanilla and 2 tablespoons of margarine

5. Mix together(careful very hot). The key is to beat the mixture by hand till creamy and is not real glossy.

6. Pour into greased pan and let cool.

The dawn of a new life

Just MarriedThank you everyone who came and supported Amy and I for the witnessing of our vows. It was amazing to see how many family and friends came to our wedding. All I can say is, we are truly blessed and very grateful for all of the support. I truly hope that everyone that did make it to that special occasion found it enjoyable and ate as much food and cake as they could. Now a new life begins, one not as myself, but one with Amy. A great and quixotic journey awaits us, a tale which I believe is draped with God’s providence. It was the hand of God that brought Amy and I together and his quiet whispers which will lead us for the rest of our lives. Thank you again for all support and many blessings!

For our honeymoon we spent a week in beautiful Snow Mass, Colorado. We had a great time just relaxing and enjoying the beautiful surroundings only wishing it was ski season.We're Moving

Further, we finally have settled into our new home in Beaverton. Amy began her new job at Poison Control, saving the world one life at a time, and I went back to work for Wells Fargo, writing software for all your banking needs. Of course our house is your house, so if you’re in the neighborhood give us a ring.

If you were wondering why we are behind in updating the wedding section of our website…it is because we have a great excuse.  Logan and I have both moved out of our individual dwellings and melded our homes into one Beaverton house.  I am living with my parents until the wedding, and Logan is stuck in PDX with all of my cra…I mean stuff.  Whew!  Moving takes it out of you!  Remind me not to move again for a little while.

That said, we do plan to update you as the big day approaches, especially if you were expecting directions updates, hotel accommodations, etc.  PLEASE KEEP CHECKING BACK!!  You can also find some of our wedding details by searching for us at www.theknot.com.

Our wedding is 39 days away!!  November 4th is getting closer and closer…  We will be updating our website soon with a Wedding section, but in the meantime, this blog will suffice.  My matron of honor (Chelsea) is about to move to Arizona.  My mom is scheduling clinics at her new job like crazy.  Logan and I have found a place to rent in Portland and are starting the process of moving both of us in.  My house has not sold, so we will hold onto it as a rental for now.  (Just as well - I didn’t want to give up my little house!)  Wedding planning is underway, we finally got registered (Macy’s, Target, and Linens’n'Things, if anyone was curious), I have accepted a position at the OHSU Poison Center, and my kitties are still clueless that they are about to be moved again.  I tell you, it will be such a relief when life settles down again!

Yes she does, although lately she’s had some other priorities.  Logan proposed to me on June 24!  We have made it official and public that we are crazy about each other.  Since that day, we have been wedding planning, house marketing, job searching, and future dreaming.  We will be married in November, the month when the harvesty season gives way to the holidays.  We will have our wedding here in Medford, and then I will be making the trek back to Portland to settle and start working.  Job possibilities are still up in the air…

This is all so crazy, considering how we met - a blind date from one of my co-workers last September turned into something beyond amazing!  A year ago right now, we didn’t even know each other.  Now I realize how glad I am that I held out for who God had planned for me - His best was yet to come!  Soul mates don’t come around all that often…

I’M ENGAGED!! I couldn’t take it any longer. “Absence makes the heart grow fonder”, and last Saturday I put words into action and asked the one girl who truly understands me to marry me. We plan for an October wedding, more details to come…Below is a picture of where she actually said yes :)

Central Europe Part 1 - Austrian Dream

vienna03.jpgOne of the main reasons we haven’t posted anything for the last 2 months was because we were in Europe. I know it’s not the greatest excuse, and I know so many anonymous strangers really live vicariously through our action packed blog. (Creepy…yet there is something strangely satisfying publicizing your life). Ah, yes, the main topic, Europe. This was my first trip to Europe, unless you count the day I spent in Frankfurt airport last year traveling to the Middle East, and this was Amy’s 2nd trip. The trip was divided into 4 portions in the so limited timeframe of 10 days. The first portion is our first 2 days in Austria (mainly Vienna), 2 days in Slovakia, 3 days in Czech Republic, and 3 days in Slovakia. My goal is, over a period of a couple of weeks, is to journal each section of the itinerary.

Day 1 - Tuckered Out Travels

Our journey began at the Medford Airport International airport at 7 am. We were to catch a United flight to San Fran, then hop onto the international to London, and then to Vienna. We arrived late at night, around 10pm local time, and 10 hours late from our expected time of arrival. The owner of our Hostel was nice enough to stay late and keep the light on, The Bag and Map, which I highly recommend for any European sojourner traveling through Vienna. Vienna is a very expensive city, and a clean, quiet, and very economic stay is a must. We spent the next day touring the old city center, visiting St. Stephens Cathedral, and eating lunch at a Chinese Austrian restaurant. Later in the evening we went to a concert at the The Kursalon. Realistically there was just too much see of Vienna in one day, and it didn’t help that we were extremely jet lagged. vienna02.jpgSomeday, someday, we’re coming back to you Vienna…
